Not to be confused with the happy egg co., The Good Egg Company is a brand new arrival on the streets of London… After two years of pop-ups and late night scheming, Alex Coppard and 2 friends decided it was time to put down some roots and open their first all-day neighbourhood café. With a strong belief in quality, these guys only use produce that is in season, sourced from the best local suppliers and only ever use free range eggs.

Blueberry Buttermilk Pancakes

Happy Egg Co_Buttermilk Pancakes


120ml buttermilk

75ml cold water

150g plain flour

½ tsp baking powder

3 happy eggs

5g lard

Maple syrup

Crème fraiche



Sieve the flour and baking powder together.

Mix the buttermilk and cold water in a jug and whisk this into the flour mixture.

Beat the happy eggs together and slowly add this to the mixture, whisking until smooth.

Melt 2 tsp of the lard over a medium heat in a heavy-bottomed frying pan, then place two large spoonfuls of the batter in to cook.

Cook for a minute, flip, then cook for a further minute.

Serve with maple syrup, crème fraîche, and blueberries.
